Before I move away to University, I have made a promise to myself to collect up all my Mum’s recipes. We’re talking the heaps of of dog-eared pages and scribbled notes, which clutter our kitchen and worktops, and compile them into one big file of yummyness.
They are recipes which are priceless family heirlooms, never to be found again if misplaced, and fail-safe methods which never fail to please a crowd of hungry mouths.
I know that if I carry these with me, I can always cook up a treat wherever I am, and be transported right back home, because after all, nothing tastes the same as your mum’s cooking, right?
When making a cake, I only ever need look in one place. The tried and tested ‘Stork’ cook book which lies safely snuggled in our cookery book cupboard. Guaranteed to be the most used recipe in my house, it has never failed to deliver a cake less than perfect. So why change a classic?
Delicious, moist and light as a feather every time, this recipe makes the perfect birthday cake. I guarantee you will never need another cake recipe…
(Makes a one layer cake, to fill an 8in tin)
125g butter or margarine
125g self-raising flour
125g caster sugar
1 tsp vanilla extract
Preheat oven to 160 Oc (fan assisted)
1. Beat the butter and sugar together with an electric mixer till light and fluffy.
2. Add the eggs and beat till smooth.
3. Sieve flour and gently fold in.
4. Add vanilla extract and milk, beat with mixer till smooth and creamy.
5. Place in oven for approx. 25-30, until golden brown on top and starting to come away from edge of tin. Test with a skewer, if it comes out clean then your cake is done!
Give it a try, its so simple and easy! A beautiful birthday cake, that’s oh so snazzy of course! You need never buy a shop bought version again!
